Premium cracker pie recipe details
- Ingredients:
- 3 egg whites
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1 cup sugar
- 14 single Premiumcrackers, crushed with rolling pin
- 1 teaspoon vanilla
- 1/2 cup nuts (walnuts are best)
This recipe was developed by my maternal grandmother, Ruth Colton. My grandfather worked for the R.J. Nabisco Company, which makes Premium Saltine Crackers. The company was interested in promoting additional uses for its products, so all the wives were asked to develop recipes. This one appeared on the Premium Cracker box for a time. It’s a delicious meringue-type dessert. If baked in ramekins, it can be topped with vanilla ice cream and strawberries or raspberries for an unbelievably delicious dessert! If baked in pie pan, serve in wedges on plates with fruit on top.… Susan Vernon
Beat egg whites till frothy. Add salt and baking powder. Beat until stiff. Fold in sugar and cracker crumbs, etc. Bake at 250 degrees in a well-buttered pie pan or in an individual ramekins until top browns but center is still somewhat gooey.
