River run eggs recipe details
- Ingredients Salsa:
- 3 or 4 Roma tomatoes, cut up as fine as possible without crushing.
- (Sharp knife is required here.)
- One third of a white onion, chopped fine
- One Serrano pepper, chopped fine
- Juice of 1/2 lime
- 1 Tablespoon of olive oil with chili peppers (ordinary olive oil is OK)
- Salt to taste
- 1/4 cup chopped fresh cilantro (Chinese parsley)
- Prep ingredients:
- 2 English muffins
- Miracle Whipsalad dressing
- 4 eggs
- Medium cheddar cheese
One of our all time favorite and most popular breakfasts is an original of Bill’s.
Salsa:Combine all ingredients except cilantro and stir together until mixed. Add cilantro last and gently stir until mixed Vary the amount of onion and cilantro according to taste. Remember, the Serrano peppers never have the same heat; we have found the smaller ones are hotter.
Prep ingredients: Make the salsa first and place in refrigerator. Split muffins and warm in toaster. While muffins are warming, poach eggs until done as desired. Lightly butter or margarine muffins and spread each with Miracle Whip. Place muffins side by side on a pre-warmed plate and place fresh salsa between and around each muffin. Place one egg on each muffin and then sprinkle with cheddar cheese. Place in warm oven (250 degrees F) until cheese is melted. Serve immediately with extra salsa available on the side. Try adding home fried potatoes or black beans.
