Prawn and mango salad recipe details
Ingredients
1 | mango |
300 g | king prawns |
300 g | lamb’s lettuce |
2 clove(s) | garlic |
1 small | red chili pepper |
3 tbsp | olive oil |
1 sprig(s) | cilantro |
½ | lemon, juice |
6 tbsp | yoghurt |
1 tsp | honey |
salt and pepper |
Instructions
Half, seed and finely chop the chili pepper. Peel and mince the garlic. Peel and devein the prawns. Combine the prawns with the garlic, chili and the oil and marinate for 1-2 hours.Wash and trim the lamb’s lettuce and divide onto plates. Peel the mango and cut ¾ of the pulp in stripes. Arrange the stripes star-shaped on top of the lettuce.
Purée the remaining mango pulp. Chop the cilantro and set some leaves aside for decoration.
Mix the mango purée with cilantro, yoghurt and lemon juice. Season to taste with salt, pepper and honey. Drizzle the salad with the dressing.
Fry the prawns in a pan until pink and just done. Season with salt and divide between the mango slices. Serve garnished with the remaining cilantro leaves.
