Lin shared this recipe with me the night we left her house in Gerry, New York to head across the Midwest to South Dakota in November. Gary and I were traveling with our newborn son, Mark Gabriel. And as usual, Gary wanted to drive all night to beat a storm. Lin sliced the Prairie Bread and sent us out into the night. It was a long cold night. That bread was so delicious to snack on while we tried to keep each other awake and the baby asleep. That’s a memory where I can see the darkness of the night, hear the stillness of the car, and taste the delicious home-made bread baked on love for us.
- Ingredients
- 4 eggs
- 2 cups sugar
- 1 cup oil
- 2-1/2 cups flour
- 1 cup oatmeal
- 3 cups grated zucchini
- 1 teaspoon vanilla
- 1-1/2 teaspoon baking soda
- 1-1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup raisins
- 1 cup nuts, chopped
Break eggs in a bowl and gradually add sugar and then the oil. Combine the dry ingredients and add to the egg mixture alternating with zucchini. Stir in raisins and nuts and vanilla. Grease and flour 2 large or 3 medium loaf pans. Bake at 350 degrees for 1 hour. Makes great muffins too!
