Potato turnovers with herbs recipe details
Ingredients
For the dough: | |
400 g | potatoes |
2 | egg yolks |
40 g | butter, soft |
40 g | semolina |
150 g | flour |
salt and pepper | |
nutmeg | |
For the Filling: | |
mixed herbs, e.g. parsley, wild garlic | |
80 g | Cheddar cheese |
220 g | cream cheese |
3 | egg yolks |
salt and pepper | |
nutmeg | |
1 | egg yolk, to brush |
40 g | butter |
Instructions
Cook the potatoes unpeeled in salted water for 20 minutes. Peel, then pass through a potato ricer or mash.Combine the potatoes with the egg yolks, butter, semolina and flour. Season to taste with salt, pepper and nutmeg. Set the mixture aside at room temperature for 15 minutes.
Meanwhile wash and chop the herbs. Grate the cheese. Mix the cream cheese with 3 egg yolks until smooth. Mix in the grated cheese and the herbs. Season totaste with salt, pepper and nutmeg.
On a lightly floured surface roll out the potato dough. Cut out circles with a diameter of 8 cm. Whisk the last egg yolk and brush the edges. Place in each half of the circles 1 tbsp. of the cheese and herb filling. Turn over the other half and firmly press the edges together.
Transfer ever a few of the turnovers into boiling salted water and let simmer for 6-8 minutes. Continue until all are used up.
Melt butter and sauté the potato turnovers until golden brown.
