Ingredients
8 large | potatoes, for baking |
8 slice(s) | breakfast bacon |
16 tbsp | Cheddar cheese |
some | freshly ground pepper |
Instructions
Preheat oven to 200°C.
Scrub potatoes and wrap them in aluminum foil. Prick each potato with a fork several times to let any steam escape. Bake for 75 minutes or until knife inserted in center of potato goes through all the way.
In the meantime, fry the bacon in a pan over medium heat until crispy. Let cool completely, then crumble into little pieces.
Remove potaotes from oven and let them cool for a few minutes. Cut them in half lengthwise and scoop out most of the meat. Reserve meat for a different use (mashed potatoes, etc.)
Place some of the bacon into the potato skin and top with 1 tbs of cheddar. Add freshly ground pepper. Transfer onto a baking sheet and return to the oven for another 12-15 minutes until cheese is bubbly and the edges of the potatoes have turned golden. Serve with sour cream dip.
