Potato salad with mayonnaise recipe details
Ingredients
1 ½ kg | yellow or Yukon potatoes, smaller spuds are better |
1 medium | onion(s), chopped |
2 | dill pickles, diced |
200 ml | mayonnaise, light |
3 tbsp | vinegar |
3 tbsp | oil |
1 ½ tsp | sugar |
¼ tsp | salt |
pepper to taste | |
milk, if needed |
Instructions
Boil potatoes with skins until done. Drain water and let potatoes cool, then peel and slice. Put in large bowl. Add chopped onion and diced pickles.In a smaller bowl combine mayo, vinegar, oil, sugar, salt and pepper. Mix well. Pour dressing over potatoes, mix everything carefully. Let stand in refrigerator for 1-2 hours. If salad is still too dry, add milk by the spoonful and mix again carefully.
