Potato salad swabian style recipe details
Ingredients
1 kg | potatoes |
1 large | onion |
250 ml | hot beef or chicken stock |
salt | |
pepper | |
6 tbsp | vinegar |
6 tbsp | sunflower oil |
1 bunch(es) | dill, or chives, chopped |
5 | spring onions |
Instructions
Boil the potatoes with skins until soft, then peel and slice them while still hot. Let them cool.Add the onion. Mix the hot stock with salt, pepper and vinegar and pour 1/3 of it over the potatoes. Let the salad soak for 30 minutes, and check if more stock is required. The salad should be “wet”.
Add the oil and herbs, and the chopped spring onions. Mix thoroughly, and let it soak again for a short time.
Eat the salad while still warm. It is especially tasty with home made beef or chicken stock.
