Ingredients

500 g potatoes, boiled
50 g butter
2 tbsp flour
100 ml double cream
2 slice(s) bacon, chopped
1 clove(s) garlic, crushed
50 g Gruyere, grated

Instructions

Peel the potatoes and mash them through a potato ricer, then mix with the butter and sifted flour. Knead until you have a firm dough. Roll it out ¼ inch/0,5 cm thick and lay it in a buttered and floured flan tin. Prick the base a few times with a fork.

Mix the double cream with bacon and garlic and spread the mixture on the base. Sprinkle with cheese and bake at 200°C/400°F/Gas mark 6 for about 20 minutes.

Serve hot as a main dish with salad or cold on a buffet table.
