Potato pizza recipe details
Ingredients
300 g | potatoes, floury variety |
salt and pepper | |
20 g | fresh yeast |
1 pinch(es) | sugar |
125 ml | lukewarm milk, you may need more |
250 g | flour, and some extra |
600 g | ripe tomatoes, peeled and diced |
1 | onion, finely chopped |
2 clove(s) | garlic, finely chopped |
2 tbsp | olive oil |
1 sprig(s) | fresh thyme, finely chopped leaves |
1 sprig(s) | fresh oregano, finely chopped leaves |
200 g | Feta cheese, crumbled |
Instructions
Cook the potatoes in their jackets in salted water until done.Mix the yeast with the sugar and dissolve in some of the lukewarm milk. Stir in some flour, then dust with flour, cover and leave to rise in a warm place for 30 minutes.
Peel the potatoes while still hot, then pass them through a potato ricer into a bowl. Mix in the remaining flour and milk and ˝ teaspoon of salt. Knead until well combined. If necessary add more milk. When the dough is smooth and pliable, leave to rise in a warm place for 30 minutes.
In a saucepan, heat the olive oil and sauté the garlic and the onion. Stir in the tomatoes. Season with salt and pepper and add the herbs. Reduce the sauce over medium heat until thickened.
Preheat the oven to 200°C.
Roll out the dough on a lined baking tray. With your fingers equally press wells into the dough. Evenly divide the tomato sauce on the dough and divide the Feta cheese on top. Season with pepper.
Transfer the pizza into the preheated oven and bake for 30 minutes until crispy and brown.
