Ingredients
5 large | yellow potatoes |
1 medium | onion(s) |
2 | eggs |
1 tsp | salt |
¼ tsp | pepper |
1 dash(es) | ground nutmeg, optional |
4 tbsp | flour |
canola oil for frying |
Instructions
Peel potatoes and onion, cut in rough cubes. Shred the vegetables in the food processor, this will make a crunchier style potato pancake.Alternative method: use a food processor/blender with the knife blade and the pulse function, to puree until smooth. This makes a finer dough which is the traditional way of making it.
Turn the mixture into a large bowl; add the eggs and seasoning, stir well. Now add the flour to thicken the dough. Cover with clear foil, let stand for 5 minutes.
If the mixture’s color turns darker, which may happen with older potatoes, do not worry, once they start frying, their natural yellow color will come back.
Pour about 2tbsp of mixture in a large frying pan; pat it down evenly – 2 to 3 should fit nicely at one time. Fry several minutes until golden brown. The first batch will take the longest. With a paper towel pat off the excess oil.
Serve with home-made apple sauce. Left-over latkes freeze well.
