Potato leek and spring onion quiche recipe details
Ingredients
250 g | shortcrust pastry |
2 | spring onions, trimmed, chopped |
1 medium | leek, thinly sliced |
100 g | potatoes, peeled, diced |
3 medium | eggs |
1 medium | egg, yolk only |
300 ml | milk |
salt and pepper, to taste | |
30 g | Cheddar cheese, grated |
1 tbsp | chopped chives |
Instructions
Preheat oven to 180°C.Line four quiche tins or one large one, with shortcrust pastry. Line with greaseproof paper and bake for 10 minutes. Remove paper.
Mix together the spring onions, leek and potatoes and divide equally between the quiche cases, or pour into the tin if you are using one large one.
Beat together eggs, yolk, milk and seasoning and pour mixture on top. Sprinkle with grated cheese and chopped chives and bake for 20-25 minutes.
