Ham and egg snack recipe details
Ingredients
1 | onion, chopped |
100 g | ham, diced |
salt and freshly ground black pepper | |
10 tbsp | oil |
100 g | stuffed olives, chopped |
12 | eggs |
25 g | almonds |
¼ bunch(es) | thyme, chopped |
30 g | freshly grated Parmesan cheese |
1 clove(s) | garlic, minced |
2 tbsp | lemon juice |
Instructions
In a pan heat 1 tablespoon of oil and sauté the onion and the ham. Season with salt and pepper, take from heat and stir in the olives.Break the eggs into a bowl. Season with salt and pepper. Divide the ham mixture into 12 small glasses. Pour over the egg. Cover with ovenproof foil.
Preheat the oven to 175°C. Place the glasses in the oven into a water filled deep baking tray. Bake for 30-40 minutes.
Roast the almonds in 1 tablespoon of oil. Transfer into a blender and add the garlic, thyme, cheese and the remaining oil and process until smooth. Season to taste with lemon juice, salt and pepper.
Serve the egg snacks together with the pesto.
