Potato Goulash recipe

|6 large||potatoes, peeled|
|1 medium||onion, diced|
|2 tsp||olive oil|
|800 ml||tomato paste|
|salt and pepper, to taste|
Heat oil in a soup pot and add onion, potatoes, carrots and leeks. Sauté until slightly browned.
Add 500 ml water and let simmer, uncovered, until the water is reduced to almost half.
Add remaining water and the tomato paste and cook for about 20-30 minutes.
