Potato cakes recipe details
Ingredients
300 g | mashed potatoes, cold (leftovers) |
200 g | freshly grated Cheddar cheese |
2 | egg yolks |
30 g | chives, chopped |
50 ml | oil |
30 g | butter |
flour, to dust | |
salt and pepper |
Instructions
Mix the cheese with the cold mashed potatoes. Add the chives and season to taste with salt and pepper. Finally stir in the egg yolks.Transfer the mixture onto a floured surface and divide into eight equal parts. Shape to balls and flatten.
In a skillet, heat the butter and oil and fry the potato cakes on both sides until golden brown and crispy. Allow to drain on kitchen paper.
Goes well as a vegetarian main dish with a green salad or as a side dish with meat or fish.
