Ingredients

300 g mashed potatoes, cold (leftovers)
200 g freshly grated Cheddar cheese
2  egg yolks
30 g chives, chopped
50 ml oil
30 g butter
flour, to dust
salt and pepper

Instructions

Mix the cheese with the cold mashed potatoes. Add the chives and season to taste with salt and pepper. Finally stir in the egg yolks.

Transfer the mixture onto a floured surface and divide into eight equal parts. Shape to balls and flatten.

In a skillet, heat the butter and oil and fry the potato cakes on both sides until golden brown and crispy. Allow to drain on kitchen paper.

Goes well as a vegetarian main dish with a green salad or as a side dish with meat or fish.
