Potato bell pepper and sausage casserole recipe details
Ingredients
800 g | potatoes |
salt and pepper | |
1 tbsp | caraway |
4 large | red bell peppers, cleaned and halved |
3 | frying sausages, peeled |
2 tbsp | oil |
4 sprig(s) | thyme, chopped |
100 g | freshly grated Cheddar cheese |
30 g | butter |
30 g | flour |
250 ml | vegetable stock |
250 ml | milk |
Instructions
Cook the potatoes for 20-30 minutes until soft.Brush a baking tray with 1 tablespoon of oil. Put the bell peppers cut side down on the tray. Place the tray onto the upper rack and grill in the preheated oven until the skin turns black. Take out of the oven. Cover the peppers with a damp kitchen towel and allow to cool. Remove the skin of the peppers.
In a pan heat the remaining oil. Divide the sausage meat into small balls. Fry the balls until golden all around. Peel the potatoes and cut into slices.
In a saucepan heat the butter and the flour. Whisk in the milk and the stock and bring to a boil. Cook stirring over low heat for 5-6 minutes. Season to taste with thyme, salt and pepper.
Layer the potatoes, peppers and sausage balls into a buttered casserole dish. Coat with the sauce and sprinkle with the cheese.
Bake in the preheated oven at 200°C for 20 minutes.
