Potato and Olive Baumkuchen recipe

Ingredients
300 g | floury potatoes, peeled and cooked |
175 g | black olives, chopped |
1 tbsp | crème fraîche |
2 | egg yolks |
2 tbsp | olive oil |
4 | egg whites, beaten until stiff |
salt | |
ground nutmeg |
Instructions
Peel and dice the potatoes , then cook in slightly salted water until done. Drain.
Preheat the broiler of your oven to 200°C.
Press the still warm potatoes through a potato ricer into a bowl. Mix with the olives, crème fraîche, egg yolks and olive oil. Fold in the beaten egg white. Season to taste with salt and nutmeg.
Spread on the lined bottom of a springform pan some of the batter, approximately 5 mm thick. Broil for 5 minutes or until the surface gets lightly brown. Repeat this procedure, with new layers of 5mm each. Spread always on top of the already baked layer, until the batter is used up.
Transfer on a serving plate and serve immediately.
