|1 kg||small potatoes|
|salt and freshly ground black pepper|
|2||red bell peppers, diced|
|2||spring onions, sliced|
|1 bunch(es)||chives, chopped|
|200 g||chorizo, sliced|
|2 tbsp||white balsamic vinegar|
|200 ml||vegetable stock|
|6 tbsp||olive oil|
InstructionsCook the potatoes in salted water until done. Drain and quarter the potatoes.
Mix together the vinegar, stock and mustard and whisk in the olive oil. Season to taste with salt, pepper and sugar. Stir in the chives, spring onions, bell peppers and potatoes. Allow to soak for 30 minutes.
In a pan heat the oil. Fry the Chorizo until crispy, then add the sausage to the salad. Check seasoning and correct if necessary.
