Ingredients

500 g	Italian chili sausages
3	zucchini
250 g	tomatoes, chopped
100 ml	olive oil
1 pinch(es)	dried basil
1 clove(s)	garlic, minced
1	vegetable stock cube
200 ml	water
100 ml	dry white wine

Instructions

Cut off ends of the zucchini and then process in a blender or cut into very small pieces. Set aside.

Chop tomatoes and place in a large saucepan. Add oil and cook over low heat for 2 minutes. Add minced garlic and basil and stir. Cook for further 2 minutes.

Add pureed or chopped zucchini, water, wine and stock. Stir to combine, cover, and leave to cook on low heat for about 30 minutes.

Cut sausages into small pieces and add to the pan. Cook for another 3-5 minutes and serve.
