Potato and cheese souffl recipe details
Ingredients
2 tbsp | butter |
2 tbsp | plain flour |
2 medium | potatoes |
2 medium | eggs, separated in yolks and whites |
30 g | Gruyere cheese, grated |
50 g | Cheddar cheese, grated |
100 g | salmon, canned, drained |
salt and pepper to taste |
Instructions
Grease four individual soufflé dishes and dust with flour. Set aside.Peel potatoes and cook potatoes in boiling water until tender. Drain and then mash with a fork until very smooth.
Transfer to a mixing bowl to cool. Beat in egg yolks, add cheeses and salmon. Mix until well combined. Season to taste with salt and pepper.
Whisk the egg whites until they hold firm peaks. Fold into the potato mixture with a metal spoon until fully incorporated.
Preheat oven to 220°C.
Spoon the potato mixture into the prepared soufflé dishes.
Bake for 30 minutes or until golden.
