Potato and bean salad recipe details
Ingredients
1 kg | potatoes |
400 g | green beans |
250 ml | vegetable stock |
3 tbsp | basil pesto |
2 tbsp | white wine vinegar |
3 tbsp | olive oil |
salt and pepper | |
Parmesan cheese |
Instructions
Cook the potatoes until soft. Drain and peel the potatoes. Cook the beans in generously salted water for 8-10 minutes until done, but still a bit firm to the bite. Drain the beans and chill briefly in ice-water.Mix the pesto with stock, vinegar and the oil. Season to taste with salt and pepper.
Cut the potatoes in slices and place into a salad bowl. Add the beans and the dressing and toss. Allow to soak for 30 minutes.
Check seasoning and adjust if necessary. Serve garnished with Parmesan shavings.
