Potato and bean bake recipe details
Ingredients
300 g | green beans |
600 g | potatotes, peeled |
1 | onion, chopped |
2 tbsp | olive oil |
200 g | tomatoes, diced |
1 tsp | rosemary, dried |
1 tsp | oregano |
salt and pepper | |
430 g | white beans, drained |
200 g | pepperoni sausage or chorizo, sliced |
100 g | grated cheese (e.g. Cheddar cheese) |
Instructions
Cook the green beans in salted water for 5 minutes and the potatoes for 15 minutes. Drain.Sauté the chopped onion in olive oil. Stir in the tomatoes, the thyme and the oregano. Cook over low heat for 5 minutes and season with salt and pepper.
Thickly slice the potatoes, then transfer together with the green beans and white beans into a greased casserole dish. Evenly divide the sausage on top. Pour over the tomato mixture, sprinkle with cheese and bake in the preheated oven for 25 minutes at 200°C.
