Ingredients

300 g green beans
600 g potatotes, peeled
1  onion, chopped
2 tbsp olive oil
200 g tomatoes, diced
1 tsp rosemary, dried
1 tsp oregano
salt and pepper
430 g white beans, drained
200 g pepperoni sausage or chorizo, sliced
100 g grated cheese (e.g. Cheddar cheese)

Instructions

Cook the green beans in salted water for 5 minutes and the potatoes for 15 minutes. Drain.

Sauté the chopped onion in olive oil. Stir in the tomatoes, the thyme and the oregano. Cook over low heat for 5 minutes and season with salt and pepper.

Thickly slice the potatoes, then transfer together with the green beans and white beans into a greased casserole dish. Evenly divide the sausage on top. Pour over the tomato mixture, sprinkle with cheese and bake in the preheated oven for 25 minutes at 200°C.
