Potato and asparagus salad recipe details
Ingredients
6 medium | red potatoes, peeled, halved |
500 g | asparagus, trimmed, washed, cut into chunks |
For the Dressing: | |
240 ml | mayonnaise |
1 tbsp | Dijon mustard |
2 tbsp | balsamic vinegar |
salt and pepper, to taste | |
fresh parsley, chopped |
Instructions
Boil the potatoes for about 15 minutes, then add the asparagus and cook for another 8 minutes.Combine the remaining ingredients to make a dressing.
Drain the vegetables and toss while still warm with the dressing.
