Pot roast recipe details
Ingredients
2 kg | boneless beef roast |
60 ml | vegetable oil |
2 medium | onions, quartered |
3 clove(s) | garlic, crushed |
1 tbsp | tomato paste |
240 ml | red wine |
500 ml | beef stock |
2 | thyme sprigs |
2 | bay leaves |
fresh parsley, chopped, for garnish |
Instructions
Preheat oven to 180°C.In a Dutch oven over medium heat, heat the vegetable oil. Add the onions, garlic and tomato paste and cook for about 4 minutes. Add the wine, stock, thyme and bay leaves. Bring the liquid to a simmer, cover, and place in the oven.
Bake for 2 1/2 hours. Take out from the oven and leave to rest for 15 to 20 minutes. Skim off the fat and serve with the roast. Garnish with parsley.
