Portobello mushrooms recipe details
Ingredients
100 g | plum tomatoes, chopped |
30 g | mozzarella cheese, shredded |
1 tsp | olive oil, divided |
½ tsp | fresh basil, finely chopped |
⅛ tsp | black pepper, coarsely ground |
1 | garlic clove, crushed |
4 | portobello mushrooms |
2 tbsp | fresh lemon juice |
2 tsp | soy sauce |
Instructions
In a small bowl combine the cheese, tomato, 1/2 teaspoon oil, rosemary, pepper, and. Remove brown gills from the undersides of mushroom caps.Remove stems. In a small bowl combine 1/2 teaspoon oil, juice, and soy sauce. Brush mixture over both sides of mushroom caps.
Prepare grill.
Place the mushroom caps, stem sides down, on grill rack and grill for 5 minutes on each side.
Spoon a spoonful of the tomato mixture into each mushroom cap. Cover and grill 3 minutes or until cheese is melted.
