Pork with lemon garlic and pine nuts recipe details
Ingredients
350 g | lean pork, cut to bite size strips and seasoned |
1 medium | lemon, zested and juiced |
1 small | red onion, chopped |
4 clove(s) | garlic, finely sliced |
120 g | mixed vegetables, beans, courgettes, in bite size pieces and podded peas |
250 ml | chicken stock, 1 cube in hot water or real if you have it |
1 tsp | sugar |
1 bunch(es) | oregano |
60 g | pine nuts, toasted dry in a pan |
1 dash(es) | dry sherry, or dry white wine |
6 | pasta spirals |
2 tbsp | olive oil |
salt and pepper | |
3 tbsp | crème fraîche |
Instructions
We were looking for ways to use a glut of summer vegetables and an oregano plant which had gone berserk…Add the lemon juice, sugar, wine or sherry to the stock. Start the pasta spirals to cook.
Fry the pork in the olive oil until starting to brown. Hold in a warm oven. Fry the onion and garlic until softened, before adding the vegetables and stir fry for a few minutes, before returning the pork. Add the oregano, lemon zest and stock mixture, season to taste and stir fry whilst the pasta spirals are cooking.
When there is about a minute to go, stir in the Crème fraîche and sprinkle over the toasted pine nuts. Drain the pasta and pour over the sauce and serve.
