Pork stew with fruit and rice recipe details
Ingredients
1.2 kg | pork, neck or shoulder, boneless |
salt and pepper | |
paprika powder | |
4 tbsp | olive oil |
1 tbsp | tomato puree |
300 ml | beef stock |
1 | mango, approx. 500 g |
1 bunch(es) | spring onions |
1 | pineapple, approx. 500 g |
100 g | mango-chutney |
500 g | long grain rice |
1 bunch(es) | parsley |
Instructions
Cut the meat in bite-sized pieces. In a skillet heat the oil and sear the meat over high heat until browned all around. Season with salt and pepper. Add the tomato purée and the beef stock. Bring to the boil, cover and simmer over low heat for 45 minutes.Dice the mango and the pineapple. Cut the spring onions in bite-sized pieces. Cook the rice in 2 litres of salted water, rinse and drain. Chop parsley.
Add pineapple, mango, spring onions and mango-chutney to the meat and simmer for further 15 minutes. Season to taste with pepper, salt and paprika. Add rice and parsley to the ragout and stir until well combined. Reheat, then serve immediately.
