Ingredients

500 g broccoli, in small florets
75 g walnuts, chopped
600 g pork fillet, cut into 12 medaillons
24 sprig(s) thyme
400 g pasta
salt and freshly ground black pepper
4 tbsp oil
200 ml dry red wine
40 g cold butter flakes

Instructions

Cook the pasta in salted water until al dente, then drain. Cook the broccoli in salted water for 4-5 minutes, then drain.

Wrap the pork medaillons with 1-2 sprigs of thyme each. Tighten with kitchen yarn. Season with salt and pepper. Preheat the oven to 175°C. In a skillet heat half of the oil. Fry the medaillons for 1-2 minutes each side. Remove the meat from the skillet and transfer into a lined baking tray. Bake for 5-7 minutes.

In a saucepan heat the remaining oil. Sauté the broccoli for a few minutes. Add the cooked pasta and the walnuts and toss.

Pour the wine into the skillet and stir to loosen the drippings. Whisk in the butter flakes. Season to taste with salt and pepper.

Serve the medaillons together with the broccoli and pasta and the red wine sauce.
