Pork medaillons with blueberry sauce recipe details
Ingredients
1 kg | pork fillet |
salt and pepper | |
3 tbsp | concentrated butter |
For the sauce: | |
500 g | blueberries |
1 | red jalapeņo pepper |
1 | fresh ginger, approx. 2cm |
2 | limes, zest and juice |
4 tbsp | olive oil |
salt and pepper | |
soft sugar |
Instructions
For the blueberry sauce:Wash and drain the blueberries. Seed and finely chop the jalapeņo pepper. Peel and finely grate the ginger. Transfer 250g of the blueberries into a bowl. Add the jalapeņo pepper, ginger, juice and lime zest (reserve 1 tablespoon of the rind for decoration) and mix well. Set the mixture aside to steep for 1 hour.
For the pork fillet:
Rinse the meat with cold water, pat dry and slice into medaillons. Season to taste with salt and pepper. In a pan, heat the concentrated butter and sear the medaillons on both sides. Reduce the heat and cook the medaillons over gentle heat until just done. Wrap into kitchen foil and set aside for some minutes.
To finish and serve:
Puree the remaining blueberries and stir the puree into the marinated blueberries. Pour in the olive oil, stirring constantly. Season to taste with salt, pepper and soft sugar.
Serve the medaillons with the blueberry sauce and sprinkle with lime zest.
