Pork loin roast recipe details
Ingredients
1 kg | pork loin roast |
salt and pepper | |
1 | onion, chopped |
2 tbsp | oil |
1 bunch(es) | parsley, chopped |
750 g | button mushrooms |
125 g | single cream |
Instructions
Rub the meat with salt and pepper. In a pan heat half of the oil. Sauté the onion until lucent. Stir in the parsley. Remove from the heat.In a roasting tin, heat the remaining oil. Fry the roast over medium heat until golden all around.
Add the mushrooms and the cream, season the sauce with salt and pepper. Spread the meat with the onion and parsley mixture. Cover and braise in the preheated oven at 120°C for 90 minutes. Turn the meat around and cook for another 90 minutes. Take the meat out of the sauce and keep warm.
Season to taste the sauce with salt and pepper. Carve the roast and serve with the mushroom sauce, together with mashed potatoes.
