Ingredients

680 g pork fillet, trimmed, excess fat removed, cut into slices
1 tbsp flour
25 g butter
30 ml olive oil
1 medium onion, finely chopped
250 g rice
30 ml brandy
150 ml single cream

Instructions

Coat pork slices in flour.

Heat the butter and oil in a frying pan and cook the onions for 4 minutes. Remove onions onto a plate and set aside.

Cook the rice.

On a medium heat sauté the pork fillet slices for about 4 minutes each side until golden brown.

Heat the brandy in a ladle and set alight. Pour onto the pork and allow to flambé.

To serve, spoon rice onto plates, arrange the pork slices on top and keep warm in a low oven.

Add single cream to the frying pan and stir over a low heat to combine the meat juices and cream. Pour the sauce over the meat.
