Pork fillets in brandy cream sauce recipe details
Ingredients
680 g | pork fillet, trimmed, excess fat removed, cut into slices |
1 tbsp | flour |
25 g | butter |
30 ml | olive oil |
1 medium | onion, finely chopped |
250 g | rice |
30 ml | brandy |
150 ml | single cream |
Instructions
Coat pork slices in flour.Heat the butter and oil in a frying pan and cook the onions for 4 minutes. Remove onions onto a plate and set aside.
Cook the rice.
On a medium heat sauté the pork fillet slices for about 4 minutes each side until golden brown.
Heat the brandy in a ladle and set alight. Pour onto the pork and allow to flambé.
To serve, spoon rice onto plates, arrange the pork slices on top and keep warm in a low oven.
Add single cream to the frying pan and stir over a low heat to combine the meat juices and cream. Pour the sauce over the meat.
