Ingredients
500 g | pork fillet, cut into medaillons |
2 | oranges, juice |
1 dash(es) | balsamic vinegar |
1 tsp | sugar |
2 tbsp | bramble jam |
150 ml | single cream |
1 tbsp | lard |
salt and pepper |
Instructions
In a saucepan, melt the lard. Fry the pork medaillons over high heat from both sides. Season with salt and pepper and take out of the pan.Pour in the pan a dash of balsamic vinegar. Sprinkle with the sugar and pour in the orange juice. Stir in the jam and the cream. Cook stirring over low heat for 5 minutes. Season to taste with salt and pepper.
Return the meat and allow to cook briefly, turning the medaillons once until warmed through and cooked to your liking.
