Ingredients

1 tbsp	vegetable oil
4	pork chops
	salt and freshly ground black pepper
250 g	shallots, peeled
2	cooking apples, peeled, cored and sliced
300 ml	English cider
1 tbsp	freshly picked sage leaves, chopped

Instructions

Blanch the shallots for 3 minutes.

In a pan heat the oil. Fry the pork chops briefly until slightly browned on both sides. Season with salt and pepper. Add the shallots and fry until golden. Add apples, cider and sage, cover with a lid and cook over low heat for approximately 20 minutes. Season to taste the sauce with salt and pepper.

Serve with mashed potatoes.
