Ingredients
Serves: 4- 4 pork chops (approx 1/2 inch thick)
- 1 cup uncooked white rice
- 1 medium onion, sliced 1/8-inch thick
- 1 bell pepper, sliced 1/8-inch thick
- 1 large tomato, sliced 1/8-inch thick
- 2 (10 1/2 ounce) cans beef broth
- 1/2 teaspoon thyme
- 1/2 teaspoon marjoram
- 2 tablespoons vegetable oil
Preparation method
Prep: 20 mins | Cook: 1 hour 30 mins | Extra time: 30 mins1. Preheat oven to 350 degrees F (175 degrees C). Butter a two quart baking dish. Add uncooked rice to baking dish.
2. Sear pork chops in vegetable oil.
3. Layer tomato, pepper and onion onto rice. Top with 2 chops. Add second layer tomato, pepper and onion. Top with remaining chops. Sprinkle with marjoram, thyme, and salt and pepper to taste. Pour on beef broth.
4. Cover and bake in the preheated oven 90 minutes.
