Pork and vegetable casserole with rice recipe details
Ingredients
500 g | boneless pork shoulder, cut into cubes |
120 g | bacon, diced |
3 | onions, chopped |
4 | red bell peppers, diced |
1 | aubergine, peeled and diced |
6 | tomatoes, peeled and diced |
salt and pepper | |
butter | |
300 g | rice |
½ l | vegetable stock |
Instructions
Preheat the oven to 180°C.Cook the rice in salted water for 10 minutes, then strain.
In a saucepan, heat the butter. Add the bacon, onions, bell peppers and aubergine. Fry over medium heat for 5 minutes. Season with salt and pepper. Transfer the vegetables into a casserole dish.
In the saucepan, sear the pork over high heat for another five minutes, then take the pan from heat and season the meat with salt and pepper.
Divide half of the tomato dices on the vegetables in the casserole dish. Cover with half of the cooked rice and add the pork. Cover with the remaining rice and tomatoes. Season with salt and pepper. Add the vegetable stock, cover and place the casserole dish in the oven for 40 minutes.
