Polenta Squares recipe

Ingredients
1 l | milk and broth mixture |
200 g | corn grits for Polenta |
150 g | freshly grated Parmesan cheese |
50 g | butter |
salt and pepper | |
chili powder | |
fresh rosemary |
Instructions
Bring the milk and broth mixture to a boil and pour the corn grits slowly into the boiling liquid. Cook, stirring constantly, for 20-30 minutes. Do not leave alone or the polenta will spit!
Take from heat, add 100g Parmesan cheese and the butter, season to taste with salt, pepper and chili powder and spread the polenta evenly onto a baking tray. Leave to cool.
Cut squares with a pizza cutter or a sharp knife, sprinkle with the remaining Parmesan cheese, add some rosemary and bake for 20 minutes at 180°C.
Serve with any meat or vegetables.
Variation:
You can also let the polenta squares cool down after baking and serve as finger-food, topped with a small piece of Gorgonzola cheese or some olives.
