Plum butter filled doughnuts recipe details
Ingredients
500 g | flour |
1 pinch(es) | salt |
42 g | yeast, fresh |
2 tbsp | sugar |
70 g | sugar |
125 ml | milk, lukewarm |
100 g | butter |
2 medium | eggs |
2 l | oil, for deep-frying |
200 g | plum butter |
icing sugar |
Instructions
Combine the flour and the salt in a bowl. Press a well into the middle and add the crumbled yeast. Sprinkle with 2 tablespoons of the sugar. Add 50 ml of the milk. Mix with your fingertips with a little of the flour. Cover and allow to rise at a warm place for 15 minutes.Melt the butter. Remove from the heat. Stir in the remaining milk. Add the remaining sugar, eggs and the lukewarm butter mixture to the dough. Knead until smooth and pliable. Cover and allow to rise at a warm place until doubled in size.
Knock down the dough and knead again. On a floured surface roll out the dough. Cut out 32 rounds. Allow to rise at a warm place for another 20-30 minutes.
Heat the oil. Deep-fry the doughnuts, turning once, until golden brown on both sides. Drain on kitchen paper and allow to cool a bit. Heat the plum butter. Fill the plum butter into a icing syringe or a piping bag with a long thin nozzle. Sideways squeeze some of the plum butter into the middle of each doughnut. Serve dusted with icing sugar.
