Plum and Ginger Sauce recipe

|500 g||plums, pitted and cut into quarters|
|2 tbsp||red wine vinegar|
|3 tbsp||Demerara sugar|
|2 tbsp||freshly grated ginger|
|1 tbsp||Worcester sauce|
In a saucepan bring all ingredients to a boil. Simmer over low heat for 20-25 minutes.
Pass the sauce through a sieve and discard the plum skins.
Serve the sauce with roast duck or game birds.
