Pleasant Lake House Waffles recipe

- 2 cups sifted flour
- 1 Tablespoon sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 egg yolks, well beaten
- 2 cups buttermilk
- 1/2 cup butter (soft, not melted)
- 3 egg whites, stiffly beaten
Sift flour, sugar, baking powder, baking soda, and salt all together and set aside. Combine beaten egg yolks, buttermilk, and butter; blend thoroughly. Add liquid mixture all at one time to dry ingredients; mix only until batter is smooth (overbeating will ruin the waffle). Fold in beaten egg whites. For best results, refrigerate for half an hour before cooking. Bake on hot waffle iron. (Pleasant Lake uses a heart-shaped waffle iron exclusively.)
