Platskis ukranian potato pancakes recipe details
- Ingredients
- About 1 pound of russet potatoes (with or without skins), washed clean
- 1 egg
- 1/2 cup plus 4 Tablespoons all-purpose flour
- Salt and ground white (or cayenne) pepper to taste
- 2 Tablespoons olive oil, plus some for frying
Quarter potatoes and put them into blender with egg, flour, salt, pepper, and oil. A little lemon juice prevents darkening. In preheated/oiled frying pan, put one heaping tablespoon of batter, spreading thinly. Fry a few at a time for 3 to 4 minutes each until golden. Blot with a paper towel. Serve warm with cottage cheese, sour cream, or apple sauce. If you prefer home fry style, coarsely grate the potatoes instead of blending, but do try the smooth blend for a special “platski”.
