Ingredients

For the dough:
500 g flour
42 g yeast
1 tsp sugar
1  egg
3 tbsp olive oil
1 tsp salt
220 ml lukewarm water
For the filling:
3 clove(s) garlic
capers
anchovies
1  green chili pepper
2 tbsp olive oil
1 large frisee lettuce
2 handful olives, pitted
fresh herbs, e.g. parsley, oregano, sage
salt
olive oil

Instructions

In a bowl combine the ingredients for the dough. Knead until the dough is smooth and pliable. Cover with a tea towel and leave at a warm place for approximately 30 minutes to double in size.

For the filling chop the garlic, capers, anchovies and chili pepper. In a skillet, sauté the chopped ingredients. Wash and clean the frisée lettuce, pluck into bite-sized pieces and add it dripping wet into the skillet. Cook over low heat for 15 minutes. Finally add in the chopped herbs and the olives, cut in rings. Remove the skillet from the heat and season to taste with salt.

Preheat the oven to 200°C. Knead the dough again. On a lightly floured surface, roll out the dough and cut out small squares (10*10 cm). Place onto each, 1 tablespoon of the filling. Then fold over the dough to triangles. Firmly press the edges.

Brush the Turnovers with oil, place on a lined baking tray and bake in the preheated oven for 15-20 minutes or until golden brown.

Note:
You can substitute savoy cabbage for the frisée lettuce.
