Pistachio cookies recipe details
Ingredients
150 g | white baking chocolate |
100 g | pistachio nuts, unsalted |
150 g | butter, unsalted |
200 g | sugar |
½ tsp | salt |
1 | egg |
250 g | flour |
3 | limes, untreated |
2 tbsp | dark rum |
Instructions
Chop chocolate and pistachios. Whisk butter, sugar and salt until light and fluffy, for about 5-6 minutes. Whisk in the egg. Zest the limes. Fold flour, lime zest, rum, chocolate and pistachios into the mixture.Use two teaspoons to make walnut-sized balls which you place on a baking tray covered with baking paper.
Preheat oven to 180°C.
Place them at least 4cm apart as the cookies spread when baking. This makes about 2 baking trays.
Bake for 8-10 minutes.
Variation:While you are at it, make another batch with orange zest and Cointreau.
