Pineapple crispwith strawberry coulis recipe details
- Ingredients:
- 1-1/2 pound chopped fresh pineapple
- juice of 1/2 lemon
- 2 cups sugar
- zest of 2 oranges
- 1/4 teaspoon vanilla extract
- 1-1/2 cups flour
- 7 ounces cold butter
- Strawberry Coulis:
- 1 pound fresh strawberries
- 2 Tablespoons sugar
- juice of 1 lemon
Preheat oven to 400 degrees. Combine 1 cup sugar and flour together in electric mixer. Add coarsely chopped butter and mix until ingredients just come together. Combine pineapple, 1 cup sugar, lemon juice, orange zest, and vanilla. Place in 9-inch pie pan and cover with flour mixture. Bake 30 to 45 minutes or until golden brown.
Puree strawberries, sugar, and lemon juice together.
If crisp has cooled, heat before serving. Serve with strawberry coulis and whipped cream.
