Ingredients
Serves: 4- 1/2 cup unsweetened pineapple juice
- 1 tablespoon lime juice
- 1/2 teaspoon garlic salt
- 1/2 teaspoon ground cumin
- 1 (1 pound) beef flank steak, scored
- 1 cup cubed fresh pineapple
- 1/2 cup salsa verde
- 1 avocado, peeled and cubed
- 1 green onion, finely chopped
- 1 tablespoon minced fresh cilantro
Preparation method
Prep: 10 mins | Cook: 15 mins | Extra time: 4 hours, marinating1. Pour pineapple juice and lime juice into a large plastic resealable bag. Sprinkle flank steak with garlic salt and cumin on both sides, then add to the bag. Seal and refrigerate for 4 hours to marinate.
2. Toss pineapple with salsa verde, avocado, green onion, and cilantro in a bowl. Store in refrigerator.
3. Preheat grill to medium heat and lightly oil grate.
4. Remove flank steak from marinade and place on grill. Close lid. Cook for about 7 minutes, then flip and cook for 5 to 8 more minutes, until beef reaches at least 145 degrees F internally for medium-rare.
5. Transfer beef to a platter and let rest for 5 minutes. Slice and serve with fruit salsa spooned over each helping.
