Pine nut stuffing recipe details
Ingredients
120 g | butter |
90 g | shortening |
1 medium | onion, chopped |
2 stalk(s) | celery, chopped |
120 g | pine nuts, roasted |
300 g | cornbread |
350 g | white bread, cubed |
300 g | wheat bread, cubed |
2 medium | eggs, beaten |
2 tsp | sage |
1 tsp | thyme |
salt and pepper, to taste | |
vegetable stock, to moisten |
Instructions
Combine butter and shortening in a saucepan and sauté onion and celery until soft. Add nuts and toss. Remove from heat and set aside.Mix together breads. Add sautéd onion mixture, including butter. Add eggs and mix well. Stir in sage, thyme and season with salt and pepper to taste.
Moisten with broth until stuffing forms a ball when lightly pressed.
Preheat oven to 180°C.
Cover with foil and bake in a greased casserole dish for 20 minutes. Uncover and bake for further 15 minutes.
