Ingredients

120 g butter
90 g shortening
1 medium onion, chopped
2 stalk(s) celery, chopped
120 g pine nuts, roasted
300 g cornbread
350 g white bread, cubed
300 g wheat bread, cubed
2 medium eggs, beaten
2 tsp sage
1 tsp thyme
salt and pepper, to taste
vegetable stock, to moisten

Instructions

Combine butter and shortening in a saucepan and sauté onion and celery until soft. Add nuts and toss. Remove from heat and set aside.

Mix together breads. Add sautéd onion mixture, including butter. Add eggs and mix well. Stir in sage, thyme and season with salt and pepper to taste.

Moisten with broth until stuffing forms a ball when lightly pressed.

Preheat oven to 180°C.

Cover with foil and bake in a greased casserole dish for 20 minutes. Uncover and bake for further 15 minutes.
