1 kg | potatoes, unpeeld, cooked |
180 ml | olive oil |
2 tbsp | red wine vinegar |
1 small | onion, sliced |
1 | green onion, chopped |
3 clove(s) | garlic, minced |
¼ tsp | fresh basil, minced |
2 tbsp | fresh parsley |
salt and pepper, to taste |
Instructions
Cook potatoes and cut into quarters. Return to hot pan.Add olive oil and remaining ingredients. Stir for one minute over low heat. Set aside to cool.
Serve warm or cold.
