Ingredients
Makes: 90- 3/4 pound ground pork
- 3/4 pound ground beef
- 4 scallions, chopped fine
- 1 teaspoon freshly ground black pepper
- 1 teaspoon salt
- 1 teaspoon finely chopped fresh parsley
- 2 eggs
- 30 egg roll wrappers
- Oil to fry
- For Dipping Sauce:
- 1/2 cup vinegar
- 1/2 cup sugar
- 1 tablespoon salt
- 1 1/2 teaspoons cornstarch
- 2 teaspoons soy sauce
Preparation method
Prep: 20 mins | Cook: 15 mins1. Heat oil in deep fryer to 350 F.
2. In a large mixing bowl, combine pork, beef, scallions, pepper, salt, parsley and eggs until well blended. You can try using a spoon, but your hands will work best.
3. Place about 2 tablespoons of the pork mixture on each egg roll wrapper and roll up, making a diameter of 1 inch. Cut rolls into 2-inch long pieces, cutting crosswise at a 45 degree angle (a.k.a. bias slice).
4. Fry rolls in deep fryer until brown and crispy.
5. Make dipping sauce by placing all sauce ingredients in saucepan. Heat over medium, stirring continuously, until slightly thickened.
