Peppersteak with ratatouille is a delightful and flavorful dish that combines tender strips of beef with a medley of colorful vegetables. Ingredients

1  aubergine, diced
2  yellow bell peppers, diced
750 g tomatoes, peeled and diced
salt and freshly ground black pepper
2  onions, chopped
2 clove(s) garlic, chopped
2 tbsp olive oil
1 tbsp oregano, chopped
1 tbsp tomato puree
2 tbsp balsamic vinegar, white
2 slice(s) white bread, diced
3 tbsp mixed peppercorns
25 g butter
4  sirloin steaks
3 tbsp oil

Instructions

In a saucepan, heat the oil. Add the aubergine, bell peppers, onions, garlic and the oregano. Cook over medium heat for 3-4 minutes. Season with salt and pepper. Stir in the tomato purée. Cook for 1-2 minutes. Stir in the tomatoes and the vinegar. Bring to a boil. Reduce the heat, cover and cook for 10 minutes. Season to taste with salt and pepper.

In a mortar, crush the bread and the pepper. In a pan, melt the butter. Roast the pepper and the bread.

Preheat the oven to 220°C.

In a pan, heat the oil. Fry the steaks over high heat for 1-2 minutes each side. Season with salt and top with the bread and pepper mixture. Transfer into the oven and bake for 5 minutes. Serve together with the Ratatouille.
