Ingredients
1 | aubergine, diced |
2 | yellow bell peppers, diced |
750 g | tomatoes, peeled and diced |
salt and freshly ground black pepper | |
2 | onions, chopped |
2 clove(s) | garlic, chopped |
2 tbsp | olive oil |
1 tbsp | oregano, chopped |
1 tbsp | tomato puree |
2 tbsp | balsamic vinegar, white |
2 slice(s) | white bread, diced |
3 tbsp | mixed peppercorns |
25 g | butter |
4 | sirloin steaks |
3 tbsp | oil |
Instructions
In a saucepan, heat the oil. Add the aubergine, bell peppers, onions, garlic and the oregano. Cook over medium heat for 3-4 minutes. Season with salt and pepper. Stir in the tomato purée. Cook for 1-2 minutes. Stir in the tomatoes and the vinegar. Bring to a boil. Reduce the heat, cover and cook for 10 minutes. Season to taste with salt and pepper.In a mortar, crush the bread and the pepper. In a pan, melt the butter. Roast the pepper and the bread.
Preheat the oven to 220°C.
In a pan, heat the oil. Fry the steaks over high heat for 1-2 minutes each side. Season with salt and top with the bread and pepper mixture. Transfer into the oven and bake for 5 minutes. Serve together with the Ratatouille.
