Peppered Steak recipe

Ingredients
4 | beef fillets |
50 g | butter |
2 tbsp | olive oil |
2 tbsp | brandy |
90 ml | single cream |
crushed peppercorns | |
salt |
Instructions
Brush each side of the steaks with some oil. Coat meat with the crushed peppercorns.
Heat the butter and remaining oil in a frying pan. Quickly cook the steaks over a high heat for 2 minutes on each side. Reduce the heat and cook for a further 2 – 5 minutes each side according to taste. Sprinkle with sea salt.
Warm the brandy in a small pan, carefully set it alight and pour over the steaks. Remove meat from pan and set aside. Stir the cream into the meat juices, then pour over steaks.
Serve immediately.
