We love fajitas here at the ranch – They’re relatively easy, quick, certainly tasty and fun to eat. It took us a few years to work out a marinade that works pretty darn well on just about anything you might want to stuff into a soft flour tortilla, but we haven’t had to make any adjustments to this for a couple years, now, so it must be about right! It works great on beef, pork, poultry, fish or shrimp, and even some vegetables.

Ingredients
Makes: 6 fluid ounces (3/4 cup)- 1/4 cup fresh lime juice
- 1/3 cup good water
- 2 tablespoons canola, vegetable or olive oil
- 4 cloves garlic, chopped
- 2 teaspoons soy sauce (low sodium preferred)
- 1/2 teaspoon liquid mesquite smoke flavoring
- 2 teaspoons New Mexico chili powder
- 1 tablespoon chopped cilantro leaves (or 1 teaspoon dried cilantro flakes)
- 1/2 teaspoon ground cayenne pepper
- 1/2 teaspoon freshly ground cumin
- 1/2 teaspoon freshly ground black pepper
Preparation method
Prep: 10 mins1. In a medium mixing bowl, whisk together the lime juice, water, oil, garlic, soy sauce and liquid smoke flavoring. Stir in the chili powder, cilantro flakes, cumin, cayenne and black pepper.
2. Place desired meat (or vegetables) in a re-sealable bag. Add the marinade, and refrigerate: 2 hours to overnight for beef or pork; 1-2 hours for poultry; 30 minutes to 1 hour for seafood or vegetables.Tip
Marinate larger slabs of meat instead of chopped pieces – smaller pieces tend to get overcooked on the grill. Chop ’em up after they have been cooked.
TipWatch those marinating times. Since it has citrus (lime) juice in it, the marinade itself will tend to cook seafood and break down vegetables while it is marinating.
